Strawberry cake roll

Swiss roll cake in foreign countries isn't that popular (in my opinion), I have only seen once in a bakery shop that sells Yule log and available on Christmas. In many Asian countries, like Japan and Taiwan, they have countless varieties of Swiss cake to choose from, for example like matcha, egg custard and berries, you name it they have it! As I am having difficulties to found the one that I like in this place, I rather make one by myself and can enjoy the fun of baking. Yeah~ I haven't made cake for such a long tim, and I kind of forgot the steps, fortunately, the sponge cake still baked up in nicely golden color and very soft and spongy. The ingredients required in the recipe are relatively easy to obtain:
3eggs, 100g sugar, 1tbsp melted butter or veg oil, 1tsp vanilla, 90g flour and pinch of salt.
However, I can't really tell you the steps as I'm not even clear myself.. Lol I was more like guessing and playing around while making the cake. Therefore, I was quite surprised that it turned out so well.

Gingerbread cake

Today, when I searched over the cupboard randomly, I found an opened can of molasses -.- like seriously, I am pretty sure it has been there for quite a long time, lucky that I have found it, or else its going to expire so soon. So yeah, recipes that require huge amount of molasses would be gingerbread cake, right? I guess that's all I could think of. So here you go, an incredibly easy and taste gingerbread cake..did I tell you that it is also low in fat?:0 I don't normally make gingerbread cake,usually in the Christmas, but this one is really worth eating everyday!!so moist and the flavor is just exactly right. My mom even shared it with our neighbor and got great responds.
Gingerbread cake Recipe:
1c flour
1tsp baking soda
1/4tsp cinnamon
1/4tsp ginger
1/8tsp salt
1/4cup sugar
2tbsp softened butter
1egg
1/2cup molasses
1/2cup hot water
1) mix together flour, bs, spices and salt in a bowl.
2) in a separate bowl, cream together butter and sugar, beat in egg slowly and add molasses.
3) add flour mixture and water alternately to the butter mixture.
4) bake in 350F oven for 30mins.

Flaxseed mug cake

When I heard of this idea, I didn't give much hope to it, caz I had a feeling that the cake would turn out to be so eggy and flaxseed-y , which is the texture I don't really like to have in my cake. But I still give the recipe a chance. I tried it out and wowla !! It is amazing:D I'm not even exaggerating, the cake as you can see from the pictures, is so light and fluffy, and the sweetener actually takes away the "healthy" taste from the cake. In addition, this cake is super healthy in which you don't even have to feel guilty about eating another one :)
Flaxseed 1min cake recipe:
1/4cup ground flaxseed
1/2tsp Bp
1/2tsp ground cinnamon
1/4tsp ground ginger(optional)
1egg
2tsp honey/maple syrup
1tsp oil
1) mix together dry ingredients in a big mug, add in egg, honey and oil. Stir well. Microwave it for 1min:) enjoy with a touch more honey if you wish.

Microwaved cake

This is no ordinary cake, because it only takes a few minutes to make. The secret is a microwave:D k, this is not a big secret actually, instead, it is quite popular among household because it cause no mess and perfect for people who cannot wait or people who have a crave for sugar all of a sudden like me! However, unlike all other microwaved cake, this one is EGGLESS!!!

Recipe: (1big mug)
3T flour
3T sugar
1.5T cocoa powder
1/8t baking soda
3T oil
3T milk
chocolate chips (optional but recommended )
1) mix together flour,sugar, cocoa and baking soda. Add in oil and milk. Mix well. Microwave it for 1:30mins :)
*beware not to overcook, or else you will get a dry and crumbly cake. Its normal that the cake looks a bit wet. If its uncooked, then microwave it for another 20sec .

Banana Chiffon 香蕉戚風

The addition of banana has brought this simple chiffon cake to the next level, it is so moist and has a soft cloud-like texture. The banana also gives the cake a hint of banana flavor and it sweetness. I would say I have just achieved the best chiffon cake so far and believe it or not, it is not even hard to make.

Banana Chiffon (one 10" tube pan)
2cups unshifted cake flour
1tbsp baking powder
1tsp salt
1/2tsp cinnamon (optional)
1/4tsp nutmeg (optional)
1 1/3cup sugar
5 egg yolks
1/2cup oil
2 large bananas, mashed
1tsp vanilla
1-2tbsp milk (if needed)
7 egg whites
2tbsp sugar
1/2tsp cream of tartar
1) sift together flour, Bp, salt and spices in a bowl. In another bowl, whisk together sugar and yolks, add in oil, banana and vanilla. Stir in flour mixture. If mixture is too dry to stir, add in a tablespoonful of milk to loosen it up a bit.
2) in a large bowl, beat together egg whites, sugar and cream of tartar on high speed for 5mins, or until stiff peak has formed. Fold beaten egg whites to the banana mixture gently.
3) pour batter into an un-greased 10inch tube pan and bake in 325F preheated oven for 50-55mins.
4) after the cake is done, flip the pan up-side-down and let the cake cool in the pan completely. Run a knife around the side of the pan to take out the cake.

Mini bundt cake

Simply good brown sugar bundt cake, very spongy and moist. With the sweetness from the dried fruit, this cake is not overly sweet. However, this cake does require some extra work to make, I created quite a big mess after making these cake. :/


Recipe (6mini bundt cake)
2 egg whites
0.5oz brown sugar
1/4tsp cream of tartar
2.5oz softened butter
3oz brown sugar
2egg yolks
1tsp vanilla
1tsp white vinegar
2oz low fat sour cream
6oz flour
1tsp baking powder
1/2tsp baking soda
4oz low fat milk
2oz dried fruits (dates, raisins..etc)
1) beat together egg whites, sugar and cream of tartar until stiff peak forms, set aside.
2) beat together butter and brown sugar until light and fluffy. Add in egg yolks, vanilla, white vinegar, and sour cream, stir to combine.
3) first whisk together dry ingredients, add it to the butter mixture alternately with milk. Fold in beaten egg whites and dried fruits.
4) bake in 350F preheated oven for 20-25mins. Remove from pan immediately once it's done, let it cool in room temp.

Oreo cheesecake

Am I too late to celebrate the 100th year of Oreo cookies? No。It would never be too late. Let celebrate it with a rich and creamy Oreo cheesecake.

Oreo cheesecake Recipe (make one 8inch cake)

Crust:
1tbsp melted butter
10 Oreo cookies, crushed (no need to take out the filling)

Filling:
2packs cream cheeses, softened
1/2cup sugar
2eggs
1/2cup sour cream
5 Oreo cookies, broken into pieces(may add more, filling included)

*preparation: boil a pot of hot water, line cake tin with parchment paper and wrap the outside with 2 layers of foil.*
1) mix together melted butter and crusted cookies crumbs. Press tightly into prepared cake tin. Refrigerate it while preparing the filling.
2) preheat oven to 350F. In a large bowl, beat cream cheeses and sugar until smooth, beat in eggs one at a time. Stir in sour cream and Oreo pieces. Pour batter into cake tin.
3) bake in a water bath for 50mins. Let it cool completely in room temp. Refrigerate it overnight before serve for best result.

Red bean chiffon 紅豆戚風

Yes, this is my second attempt at making chiffon cake, May be you would be surprised and questioned "didn't you just make one yesterday?" Oh yea, sure i did. And my mom bought it over to her friend's home for sharing. :) I didnt even know that until I woke up in the morning and found that my lovely cake was disappeared. Therefore, I decided to make another one for my breakfast lunch (note that it's march break right now;) K, back to my cake..I have to admit that I still faces some problems since I am a beginner at baking this type of cake.  
Problems:
1) how come it still didn't rise even I remember to add baking powder this time-.- ?
2) how come it had no red bean taste at all even I already added so much red bean paste?!
Hopefully I could figure out a way to solve these problems and bake one little perfect cake :3

Red Bean Chiffon Cake
egg yolks 4
sugar 20g
veg. oil 50ml
water 30ml
sweetened red bean paste (store-bought kind) 160g
cake flour 100g
baking powder 5g
egg whites 6
sugar 40g
cream of tartar 1/4tsp

Chiffon cake 戚風蛋糕

 
 Guess what?! I finally found a perfect chiffon cake pan in the Home Outfitter. It is a 9inch two-piece angel food cake pan, not the non-stick type, cost $25 *(the cake wont rise in the non-stick pan, i bought one before, and i was so mad that i wasted my $ to get a wrong pan) I can finally make my very first chiffon cake at home, I have been waited this moment for so long. However, I had made the stupiest error in my life, I totally forgot about the baking powder. That is why my cake was so flat because it couldn't rise without the fxxking baking powder -.- !! ughh :< But the happiest thing was that the cake was still soft as pillow,, yumyumm :D

Basic Chiffon Cake recipe (one 9inch pan):
5 egg whites
60g sugar
1/4tsp cream of tartar
1/4tsp salt
5 egg yolks
50g sugar
60ml milk
50ml veg. oil
100g cake flour
1/4tsp baking powder

1) beat egg whites, sugar, cream of tartar and salt on high for 7mins or until it forms stiff peaks, set aside and prepare the yolk mixture.
2) with the same mixer, beat yolks and sugar together for a few minutes until sugar has dissolved. Add in milk and oil, mix to combine with a wooden spoon. Sift in flour and baking powder, mix until just combined.
3) fold beaten egg whites into the yolk mixture, be careful not to over-mix. Pour batter into a pan.
4) bake in 350F preheated oven for 35mins. Flip the pan and let the cake cool in the pan completely.

Chinese Fruit Cake 桂圓蛋糕

I have to admit that this cake tastes so good, it does go out of my expectation.
Different from the English traditional fruit cake, the Chinese version uses less butter and sugar, all the sweetness is depended on the dry fruit itself. Also, the cake requires the beaten eggs method 分蛋法, I'm not sure how you say it in English, it separates egg yolks and whites, beat egg whites into peak form , then you fold it to the yolk mixture. It helps to make cake more moist and soft.

Simple Cake Roll 瑞士卷

Cake Roll recipe:
3eggs
75g sugar
85g cake flour
1tbsp oil

1) beat eggs and sugar for 5mins on high speed, until it has doubled in volume, and has a ribbon-like thick texture. sift in cake flour, gently fold in the flour and then add oil.
2) bake in 350F(160c) preheated oven for 13mins. After its done, quickly take out the cake from the pan and pre-roll it. Then, let it cool completely before adding filling.

Green Tea Cake Roll w/ Red Bean Filling

It is true that Sunday is the laziest day of the week, every member in my family were sleeping till noon today. Even though I was still quite sick, I woke up early. Actually, my head was hurting so much, there was no way I could sleep peacefully with a headache. The first thing to do when a person is awake is probably eat, yes, everyone is hungry in the morning. I searched for food in the fridge and I found nothing. I mean there were nothing I wanted. :< ummm........first thing poped up in my mind was...GREEEN TEA CAKE ..!! and i saw another food lying in the fridge..RED BEAN FILLING~~~ what a great combination! >< The rest of the day would be amazing if you have a great start :3

Green Tea Cake Roll Recipe:
3 eggs, in room temp.
65g sugar
80g cake flour
5g green tea powder
pinch of salt
20g veg. oil or melted butter

1) Preheat oven to 350F, line a cake pan with parchument paper, set aside.
2) In a bowl, measure flour, green tea powder and salt, combine and sift twice (dont be lazy and skip this step, we have to make sure the flour mixture is lump free!!)
3) In a separate bowl, beat together eggs and sugar on high for 5mins, the egg should be doubled in volume, pale in color and form ribbon like texture.
4) Gently fold in the flour mixture into the egg, add oil and quickly fold in. Make sure everything is mixed well. (be ware not to over mix, you dont want to break the air in the egg )
5) Pour batter in the prepared cake pan, bake in preheated oven for 15mins or until the top has turned golden.   

Red Bean Filling:
store bought sweetened red bean paste
one tablespoon vanilla yogurt (to loosen the red bean paste)

Chocolate microwaved cake

Just discovered a great microwaved chocolate cake recipe in the Internet, which is on "chocolate covered Katie" blog.
I tried it with oat flour/white flour/wheat flour ..and they all turned out amazingly good. I love the one with oat flour the best, since the processed oats really give a slightly crunchy texture to the cake and I'm totally in love with it. The trick behind a soft microwaved cake is to never over cooked, even 5sec will change the texture of a cake! Mine took about a minute or so, but since not all microwaves work the same way, you always have to adjust the time by yourself.

Swiss roll cake

Don't we all love CAKE? Go away if u don't, o no wait, come back, cas this cake is so amazing and u relly hav to take a look of it:0 ! Lol. Swiss ROll Cake <3 I used to have it everyday when I was small, but then my mom stopped buying it, so I couldn't eat it anymore (too lazy to buy it myself xD) so, umm , not so sure why i made it, but I just did and it turned out so goood :D The cake was soft and spongy (lol, isn't that wht is supposed to be?! Is a sponge cake !!) then I used whipped cream as the filling, but any other filling works the same too, eg. Jam, buttercream and so on, maybe even ice-cream:0 so gd man! Uguys got to try it!!
Recipe
2 eggs , in room temp
80g sugar
55g flour
1tbsp milk
1tbsp oil
1/2tsp vanilla
1) beat together eggs and sugar with a electric hand mixer on high speed until it turns white and doubles in volume.
2) sift in flour and fold it into the egg batter. Add in remaining ingredients and mix well.
3) line an 9inch square baking pan with parchment paper and pour in the batter , bake in 350F preheated oven for 12 mins or until it turns golden brown.
4) let the cake cool completely on a rack. Then spread the filling and roll it. Put it into the fridge for abt 30mins before you cut and serve.
