Pan fried sea bass 香煎銀雪魚

With only a few ingredient on hand can also make a meal for dinner! I consider myself as white-washed and eating fish appears as a really big problem to me since fish contains lots of tiny bones and I got scared to pick them out from my mouth. Therefore, I started eating fish fillet like salmon and sashimi to keep my intake of omega 3. But this fish- sea bass, even though it still has some bones, I found no reason to resist it. It is super easy to prepare and those are big bones, so I can actually pick them out with my fingers(lol).

Sea bass recipe:
Sea bass
Salt
Butter
Mayo
1) lightly sprinkle salt over sea bass, marinated it for an hour.
2) in a big frying pan, melt a few tablespoonfuls of butter. Place in the sea bass and fry each side for 5mins or until golden brown.
3) serve immediately, it's good by itself or with mayo.

Food review: Congee queen

A Chinese restaurant , located in Markham.

food we had ordered:
Tuna fried rice 吞拿魚炒飯
Seafood fried noodle 星州炒米
Beef soup with noodle 牛腩湯麵
Fried garlic with bok choi 炒白菜仔
Congee 蠔仔粥
Chinese style BBQ pork 叉燒
Spicy chinese style Salad 中華沙律
Steamed Rice in a bowl with pork and veggie 瘦肉菜心煲仔飯
Note that I didn't take pictures for every single food that we had ordered.

Service :
Really good, the waiter who served us was really nice and we had proper communication( we spoke Cantonese to each other and no misunderstandings happened) The food were served hot and presented nicely. Overall was good, and this was actually the second time I had eaten there.

Recommendation:
I had never heard rice that is being fried with tuna before, and today i could finally had a taste of it. Just as i had expected, the tuna fried rice was really special and I really think people should try when they pay a visit to this restaurant.

Light Dessert- Avocado Mousse

Feel guilty having dessert? Don't worry;) this avocado mousse will satisfy your sweet tooth without ruining your diet plan. Talking about avocado, not many people would actually like to eat it ( at least not the people I have met ). Me, myself was not a big fan of it until last year when my dad bought me a avocado smoothie in a Vietnamese restaurant. It was so rich and creamy and did not taste like those raw avocados at all. From that time, I'm totally in love with it. Adding to that, avocado has so much nutritious and I found most people would eat it in salad. But come on, play around with avocado, don't just stick with salad. I mean this great stuff shouldn't be just on salad, it should be in every food:p lol, like mousse!!! :D

Avocado Mousse Recipe (5 servings):
1 ripe avocado
2tbsp sugar
1cup skim milk
1/2cup whipping cream
2tbsp hot water
1tbsp gelatin powder

1) in a blender, blend together avocado, sugar, milk and cream until smooth.
2) in a separated small bowl, dissolve gelatin powder into hot water. Add gelatin to the avocado mixture, continue to blend until everything is well combined.
3) pour into individual cups and refrigerate it for 1hour. Then it's ready to serve.

Butternut squash soup (a winter comfort)

A recipe that is incredibly easy, tasty and healthy. Even though I was having a bit trouble cutting the squash (great strength is needed and I have none) I would still give this soup a thumb up and would definitely make it again. By the way, take a quick glance at the nutrition facts table, you will be amazed by how amazing this soup is:)
And oh .. Forgot to say, if using spinach , mushroom and onions.. Please pre-fry them first. Therefore, to save my time, I used broccoli and tomato, leftover would be a good choice too, but sadly I had none at that time。

Butternut Squash Soup Recipe
(4-5 servings):
1tbsp olive oil
350g butternut squash, ( since i have a small family to serve, I only used half of the squash)
1/2tsp salt
1/4tsp garlic powder
1/8tsp black and white pepper
100g white potato, diced
450mL chicken broth
450mL water
450mL skim milk

1) cut the squash in half, peeled off the skin with a peeler, then chopped it in large cubes.
2) heat olive oil in a pot, sauté squash cubes for 5mins, add in seasonings.
3) add in diced potato, broth and water. Bring mixture to boil then turn heat down to medium and let it simmer for 10mins.
4) when the squash and potato are soft, put them in a blender and purée them with milk. Add mixture back to the pot and cook for another 10mins.


Baked Oatmeal

A Monday morning, slept till 10, woke up and found that today had no school. :) awesome, finally had chance to try this baked oatmeal for breakfast. I expected the texture should come out crunchy and crispy, but did I do something wrong again? It was soft , thick and creamy, a traditional oatmeal 0.0 o well, I had the wrong proportion of milk and oatmeal. No wonder. But I like this version too. Whatever that has oatmeal in it, I love it =>

Crispy Buttery Butter Cookies

My dad's request: butter cookies! For being the very first time making this cookie, I was really nervous and yet excited. Well, lucky that it didn't take me long to find a perfect recipe online. To be honest, I personally do not like cookies at all, not even chocolate chip cookies, the only kind of cookie I would eat is soft oatmeal cookie. So, when I did a taste test for this cookie, I did not like it. Well, I think you shouldn't really take my opinion since I don't even like cookies. :/ the words that I could use to describe these little butter cookies are: crispy, not too sweet, and of course buttery.

Recipe: ( about 2 dozens)
130g softened unsalted butter
65g icing sugar
35g sugar
1 beaten egg, in room temp.
1/2tsp vanilla
200g cake flour

1) beat together butter and sugar until creamy and fluffy.
2) beat in egg in 3addition. Stir in vanilla.
3) with a wooden spoon, sift and fold in flour. *( this may take some time, so be patience, don't use hand mixer)
4) preheat oven to 375F. Meanwhile, pipe the cookies on a parchment paper. Bake cookies for 10mins or until golden. *( be ware not to over bake, these cookies turn brown very quickly, so keep an eye in them)

Macau.pudding 木糠布甸

If you have been to Macau before, you must notice that everyone is holding a certain type of pudding, and guess what? That's the most famous pudding in Macau;p Since I'm not sure the English name of that pudding, I will just call it Macau pudding(lol). If you haven't been to Macau and willing to try it, don't worry cas right you can make it yourself , and guarantee the result is even better than the original one. K, first thing first, let me explain what exactly is Macau pudding: it's layers of biscuit crumbs and creamy mousse. Sounds so simple but the taste is definitely incredible.

Macau Pudding Recipe (5servings):
6g(1tsp) Gelatin powder
40mL Milk
1 Egg Yolk
160g Whipping cream
160g Mascarpone cheese
1tsp Vanilla
1tsp. Kahlua
2tbsps Condensed Milk
85g. Biscuit Crumbs

1) in a microwave-safe bowl, pour in milk and microwave it on high for 15seconds. Add gelatin and egg yolk to the warm milk, stir to combine. Set aside.
2) whip up the whipping cream in a cold bowl , it may take a few mins and the cream should form soft peaks. Gently fold in mascarpone cheese, vanilla, Kahlua and condensed milk. Add in the milk-gelatin mixture. Quickly mix together.
3) start layering the cream mixture and biscuit crumbs. First put the cream, then biscuit, repeat as many layers as you want, I found it better if the cream is the top layer. You will end up with about 5 individual cups of this pudding. Put them in the fridge and refrigerate it for 1hour.

Anytime Energy Soup

For sure people will get hungry between each meal, so, how can we not snack too much before having the actual meal? Veggie soup is the best solution to this problem. This recipe has less than 50calories and can fill you up totally. I'm not even joking, celery, tomato and water, that is it, no more than that.

Recipe (1serving)
1tbsp olive oil
1 stalk celery , diced
1/2 of a tomato, chopped
1tbsp flour
1 1/4cup water
1tsp chicken powder
Salt and pepper
1) heat a small pot with oil, add in celery and tomato. Fry them for a few mins on medium heat. Add in flour, mix them together quickly. Then pour in water, turn heat to high and bring mixture to a boil.
2) Continue to cook for another 5mins, celery should've soft to blend by now. Pour mixture into a blender, blender until the texture you want.
3) return mixture to the pot, add seasoning. Cook for a few mins . Then it's done :)

Purple oatmeal

Since i still got a box of blueberries left, Here comes another healthy breakfast recipe that contains blueberry in it:) Did u know these little blueberries are packed with a high amount of vitamin C and K and also dietitian fibre.

Purple oatmeal Recipe: 1serving
1/2cup milk
1/4cup oatmeal
1/4cup blueberries
2tsp honey
1) put all the ingredients in a microwave safe bowl and microwave it in high for 2-3mins, stop when the milk starts bubbling up.
2) take the bowl out and stir the oatmeal a bit, let the oatmeal sits for a couple mins. Don't not skip this step, just by waiting a few mins can affect the texture of oatmeal so much , and you don't wanna eat it when it's super hot out of the microwave that will burn your tongue.

Healthy blueberry pancakes

I seriously don't get why people afraid to eat healthy, like the food tastes the same but just cooked with some better ingredients. If you are those "scared of healthy food" type person., I recommend you to try this pancake recipe..this could be one of the most healthy and delicious breakfast,, You can't tell it is healthy at all by its look. Plus, it tastes amazing:) but keep in mind that never leave out the blueberries .. It gives wonderful flavor to the pancakes. If you don't want blueberries ( which you really shouldn't ), maybe try replacing it with chocolate chips, or other fruits and nuts.. The result maybe even better:3 btw, forgot to mention, these pancakes are egg free!!

Healthy blueberry pancakes(1serving:)
1/4cup oats
1tbsp flour (I used whole wheat, but all purpose is fine too)
1/2tsp baking powder
1/4cup skim milk
1tsp honey
1/4cup blueberries

1) put oats into a blender and blend until it resembles into powder form.
2) mix together oat flour, flour, baking powder. Add in milk and honey. Stir in blueberries gently.
3) heat oil in a small frying pan, pour in 1/3of the batter, flip when bubbles appear, fry till two sides are golden. Repeat the steps for the remaining batter.
4) serve with maple syrup and butter:) yumyum

Creamy broccoli soup

Recipe (4servings)
1tbsp olive oil
1/2 small onion, chopped
1 heaping tbsp flour
1clove garlic, chopped
2small head broccoli
4cups water
1 1/2tsp salt
1tsp garlic powder
1/4tsp black and white pepper
2 slices cheddar cheese
1/4cup each Milk and whipping cream

1) hot oil in a pot, fry onions and garlic until golden, sprinkle flour and mix together quickly. Add in broccoli florets and water, bring to a boil then cook till the broccoli is soft to blend.
2) transfer the broccoli water to a blender, blend until a smooth mixture is resulted. Pour the mixture back to the pot.
3) add in the broccoli stems, spices, cheese, milk and cream. Cook until stems are ready to eat and soup is creamy.

Art Exam - H2O

I can't believe I cried at school in front of the whole class just because I got so stressed out. ;( That was so ridiculous. K so thats the story: on thursday, i was trying so hard to come up an idea for my art exam, which is due on next Monday. Unfortunately, my brain was not working quite well. So, I was panicking for what should I do. Then I came up with an idea that i should share my problem with my mom (lol, that's a really bad idea) my mon was yelling at me on the phone and I felt so bad and tears just automatically started running out. Every single students( include my friends) and teachers were starring at me like what's wrong?! I rushed to the washroom and just couldn't stop crying (obviously I was so stressed out at that time and got a bit emotional) so yea, I cried for like almost an hour -.- even my art teacher did a dance to comfort me :") how sweet?! K so after all the tears were gone... Miracle happened!!! Guess what?! I got an idea :D since the given topic is h2o (which is water) I did a water dragon which symbolizes water is as powerful ad dragon, therefore we should be ware of water:p and I finished it in just 2hours ! Well, it will look so much better if I pained it on a big canvas, but due to the money issue and time limit. , I think I did my best :)

Simple Delicious Tuna Sandwiches

Simple and delicious, this sandwich takes less than 5mins to put together. A great choice for a wholesome breakfast and or lunch. You won't believe how good Mayo can go with tuna, when the two merged together, it's amazing. I swear even for those who don't eat fish will love it. Try to imagine..when you bite down the soft white bread, you feel the spreadable soft cheese in your mouth melting and the tuna-mayo brings so much flavor to your taste bug.. Omgg you have just gone to heaven !!
Recipe (1 serving):
2trenches white bread
2triangles laughing cow's cheese
1/2can tuna flakes, drained
1tbsp mayo
Salt and pepper
1) spread cheese right on the bread (I prefer to not toast the bread) set aside
2) in a small bowl, mix together tuna and mayo, sprinkle salt and pepper to add some flavor. Spread tuna mixture onto the prepared bread.

Overnight Banana Oatmeal in 2ways

Go ahead and cook some oatmeal at night, Therefore you could have oatmeal as Hot or Cold in the next morning. Yes, cold oatmeal...Who says oatmeal have to be served hot? Since you are the boss of your food, add some honey or sweetener if you want it too be slightly sweeter, but I won't recommend doing that since I'm watching my weight and high sugar level could have negative effect on it.
Recipe (1serving, under200calories!):0
1/2cup lactose free skim milk
1/4cup Quaker instant oatmeal
1/2tsp vanilla
1/2banana, sliced
1/4tsp cinnamon

1) in a microwave safe bowl, microwave milk and oatmeal on high for 1mins40sec. The cooked oatmeal should still be watery, since you ate leaving it overnight, the oats will absorb the remaining liquid.
2) Stir in vanilla. Wrap the bowl with plastic wrap and put in the fridge.
3) Put the sliced banana on a plate, wrap with plastic wrap, put in the freezer.
4) k, so now should be in the next morning... In a blender, blend together the cold oatmeal and frozen banana slices ( if the banana is too hard to blend, microwave it for 15sec). Pour banana oatmeal into a bowl and sprinkle cinnamon on top. Enjoy:3
5) if you want it hot, microwave it for a minute or so.

Tuna stuffed zucchini

Sigh, only three days left till exam :/ have I started reviewing yet? Kind of, chem is freaking hard and nothing is going into my brain :( which in another word, I haven't prepared yet~_~ lol, but I couldn't just focus on exams, I need a life, and exploring new recipe is part of my life which I enjoy the most. Today recipe- tuna stuffed zucchini!! Actually, my mission today was to empty the fridge a bit, and when I saw that one little lonely zucchini that sat in the fridge, I knew I have to do something with it. My mom mostly sauté zucchini in oil along with some garlic, that's not a bad idea, though it's too simple and I wanted to do something beyond.
Recipe:
1 zucchini, cut in half
1/2can tuna flakes, drained
3 tbsp bread crumbs
1 tbsp parmesan cheese
1 tbsp sour cream
1 tsp mayo
1/2 tsp salt, garlic powder
1/8 tsp black pepper, paprika
1) scoop out the zucchini pulp with a spoon, leaving out the shells.
2) combine the pulp with all the other ingredients in a bowl.
3) in a small frying pan, sauté some chopped onions and garlic with a tablespoonful of olive oil for a few minutes or until the onions turn golden. Add the onion and oil to the pulp mixture.
4) stuff the filling back to the zucchini shells. Bake in 350F preheated oven for 15mins. After 15mins, sprinkle grated cheddar cheese on top and return to the oven for another 5mins. Great to serve it hot out of the oven :D enjoy ~!

How to cook bacon?

Well, isn't that one of the dumbest and easiest question in the world? Not really. People have their own way of cooking bacon, either takes time frying them in the pan or the faster way which is to microwave them. Have anyone ever thought about baking them in the oven? Although this method takes much more time to cook, the result is absolutely scrumptious. Here, give you a small tip which gives the bacon an extra kick, wannna hear it .. Humm??! Lol, the secret ingredient isssss MAPLE SYRUP!!! Before you pop the bacon into the oven, drizzle them with maple syrup ;) the maple syrup will give them a special sweetness.
Recipe:
6 Bacon strips
1 tbsp Maple syrup
1) line bacon strips on a foil, drizzle maple syrup over. Put in a 400F preheated oven for 15-20mins.

Summery Salad

-Recipe:
Romaine lettuce
Grated Carrot
Diced Strawberries
-Dressing:
Lemon juice
Mayo
Honey
Poppy seed
1) I don't have an exact measurement for this recipe, well, the ingredient is always flexible and editable, right?! Lol. Thats a sweet salad dressing, which goes well with most of the veggies, you have to mix it around to get that perfect taste that you are looking for.
