Banana Oat Bread Recipe (adapted from allrecipes.com, yield 8mini loaves or 12 standard size muffins)
~> In a large bowl, mix together:
1 1/2cup flour
1cup quick cooking oats
1/4cup white sugar
1/4cup packed brown sugar
2tsp baking powder
1tsp baking soda
1/2tsp salt
~> In a separate bowl, mix together:
1 egg
3/4cup milk
1/3cup oil
1/2tsp vanilla
1cup mashed ripe banana
~> pour wet mixture into the flour mixture, gently mix until combined, (DON'T OVER-MIX!) grease a muffin tin or a mini loaf tin, or line with paper cups... Bake in a 400F preheated oven for 17-20mins

Pumpkin banana oat bread
Pumpkin banana oat bread Recipe (one 9x5 loaf pan)
1cup a.p. flour
1&1/4cup oat flour
1tsp pumpkin pie spice
1tsp cinnamon
2tsp baking powder
1/2tsp baking soda
1/2cup sugar
1/4cup packed brown sugar
2mashed ripe bananas
1cup pumpkin purée
1/4cup oil
2eggs
1tsp vanilla
1/2cup raisins (optional, chocolate chips or nuts would be good too)
1) combine first six ingredients in a bowl, and remaining ingredients in a separate bowl. Stir them together until just combined.
2) bake in 350F preheated oven for 50 mins .

Chocolate Chip Cookies
What to do when there is random food laying around, for example like an egg yolk? LoL, needless to say, use it for the chocolate chip cookies recipe!
Chocolate Chip Cookies Recipe
(20 cookies)
2cups all purpose flour
1/2tsp salt
1/2tsp baking soda
3/4cup butter, melted
3/4cup packed brown sugar
1/2cup white sugar
1egg
1egg yolk
1tsp vanilla
1cup semi-sweet chocolate chips (more or less as you desire, I used only 1/2cup)
1) whisk together flour, salt and baking soda in a bowl and set aside. In another bowl, whisk together melted butter, both sugars, eggs and vanilla until well combined. Add the flour mixture to the wet, combine the two with a wooden spoon and add in chocolate chips at the same time.
2) preheat oven to 325F, line a baking tray with parchment paper. Place dough on to the paper with margin in between. Bake them for 15-17mins.

Pumpkin Oat PanCake
Get ready for fall with one of the most addicting and yet healthy pancake!
Recipe (serve1):)
1/4cup quick cooking oat
1/4cup flour
1/2tsp pumpkin pie spice
1/2tsp baking soda
1/4tsp baking powder
1tbsp water plus 1/2tbsp ground flaxseed
3tbsp canned pumpkin purée
1/4cup milk
1tsp vanilla
1) combine oat, flour, spice ,baking soda and powder all in one bowl.
2) add in flaxseed mixture, pumpkin purée, milk and vanilla
3) mix until a thick batter is formed
4) heat a pan with oil and fry the batter

Crepe with whipped cream and berries
Crepe recipe (2servings /4crepes)

1/2cup milk
1/3cup all purpose flour
1) whisk together egg and milk, sift in flour and whisk until smooth
2) heat a frying pan with butter, pour 1/4cup into the hot pan and fry until 2sides are golden.
3) serve with whipped cream and fruit, or sliced banana with nutella:)

Banana Muffin
Recipe :
Wet mix:
2 large ripe bananas , mashed
1/3cup oil
1 egg
1/2cup sugar
1/4cup unpacked brown sugar
Dry mix:
1 1/2cup flour
1tsp baking powder
1tsp baking soda
1/2tsp salt
1/2tsp cinnamon
1/2tsp nutmeg
1) mix together wet and dry mix in two separate bowl, combine the two and stir until just corporate
2) bake in a 450F preheated oven for 5mins, then turn down the temp to 350F and bake for another 10mins or until the muffins are cooked through.
3) take them out immediately and let them cool before serve.

Mantou 饅頭
Recipe (8servings):
300g flour
6tbsps sugar
1tsp baking powder
1tsp yeast
1/2tsp salt
150g warm water or milk
1tbsp oil
1) in a large bowl, mix together flour, sugar, bp,yeast and salt. Stir a well in the middle, pour in water/milk and oil.
2) flour the working surface and your hands, knead until a smooth and non-sticky dough is formed, you may need to add extra amount of flour.
3) let it rest for 15mins, then divide the dough into 8equal pieces. Let them rise in a warm place for one hour or they are doubled in size.
4) prepare a pot of cold water, steam the Mantou on medium high heat, start timing when the water begin doubling, about 13 to 15mins.

Apple Muffin
have you even open the fridge and complain there's nothing to eat for breakfast? that always happens to me on the weekday's morning! luckily, simple fruits like apples and bananas are still laying around on the counter top. so, i grab an apple, thinking what is the best way to use it. my head automatically generated a few ideas, including apple pie, apple cake, apple pancakes, and of course apple muffin. Well, making a pie is too much work, i would be dead by the time i can sit down and enjoy a piece of pie. Apple cake? umm,,not so interested in it...Pancakes? I just had them yesterday!!! So, muffin is the only option that's left, i guess thats not too bad:>
let me tell ya,, my instinct is always right
these muffins are incredibly soft and buttery
with all the apple bites
they can be considered as a healthy breakfast choice!
Apple Muffin

makes 6 muffins
1) cream together: 1/4cup (50g) softened butter
1/2cup sugar
2) beat in: 1 egg
1/2tsp vanilla
1 peeled and chopped apple
3) mix together: 1cup flour
1/2tsp baking powder
1/4tsp salt
1/4tsp baking soda
4) add flour mixture to the butter mixture, gentle fold them until just combined
5) bake in 350F oven for 25mins

Little Bun
It has been quite awhile since the last time of making homemade bread, luckily I haven't forgotten the skill of breaking making yet. However, kneading dough is quite tedious work and my arms are so weak and sore.

Spiced Banana Muffin
You would never get tired of banana muffin, like seriously, never ever! They are just simply delicious and can make endless variation. This time, added some spices to give it an extra kick.
Spiced Banana Muffin Recipe
(make 6 medium sized muffin)
90g flour
35g brown sugar
25g sugar
1 1/2tsp baking powder
1tsp cinnamon
1/4tsp nutmeg
1egg
1ripe big banana , mashed
1/4cup oil
1/4cup milk
Crushed corn flakes for topping (optional)
1) preheat oven to 350F. Mix together dry and wet ingredients in two separate bowls. Add the wet to the dry and stir until they just combined.
2) pour batter into baking cups, top with the crushed cereal, bake for 20-25mins.
Notes:
*mine took exactly 20mins.
*muffin was good in terms of the texture but it was a bit bitter in taste since I accidentally put 1/2tsp nutmeg instead of 1/4tsp -.- too careless .. So don't be dumb as me and make stupid mistakes!:(

Banana muffin
When I flipped through my recipe collection, here I found, one of the greatest muffin recipe which results in a mouth watering banana muffin:) I'm not being exaggerated or over reacting here, this is true, this is the banana muffin everyone is looking for! It's moist and fluffy, with a great amount of banana flavor, jumbo size, sugar coated top, what else could you say for this one little amazing muffin?
Banana Muffin Recipe
(make 6jumbo muffins):
1/3cup butter, soften in room temp.
1/2cup packed brown sugar
1/4cup white sugar (plus extra for toppings)
1egg
1tsp vanilla
1/4cup buttermilk (or sour milk)
1/2cup banana puree (mashed about 1large banana)
1 1/4cup flour
1tsp baking powder
1/4tsp salt
1/4tsp baking soda
1/8tsp ground cinnamon
1) Line a muffin tin with 6paper cups, preheat oven to 475F!!!
2) by using the creaming method, beat together butter and both sugars until light and creamy. Add in egg and vanilla, beat until combined. Then add in the milk and banana purée, just stir until everything corporate.
3) in a separate bowl, mix together the flour, Bp, bs, salt and cinnamon. Then add to the wet mixture and stir until just combined. (may add nuts/chocolate chips /dry fruits according to your personal preference )
4) pour batter into the muffin cups, fill them to the top, pls :) sprinkle sugar and pop them into the oven. Bake at 475F for 10mins, then reduce temp to 350F and continue to bake for another 10mins. Watch your muffin carefully, don't let them to get burnt.

Blueberry muffin
I rarely bake blueberry muffin since the blueberries are always gone before i got a chance to use them for muffins. However, no more finishing berries this time, i tried my best to save some berries to try this amazing recipe which issued by the cook illustrated. This muffin has gone so wrong! I mean the method of making it, of course it still tastes amazing :) everyone have heard of the Cook Illustrated best blueberry muffin, right?! If not, then go check it out !! I was being a careless, I scanned the recipe for a few times, and thought that I already put down everything in my head. But the true is no, I didn't read the method part carefully, and guess what? Here are all the stupid Mistakes that I made :
1) I mixed together the sugar with the flour, when I was supposed to beat it with the eggs!!
2) not enough blueberry to make the jam topping, so I replaced it with store bought strawberry jam
3) used all melted butter since I didn't realize there's oil on the ingredient list
4) added vinegar to the melted butter, and it cured -.-
5) used milk cas ran out of buttermilk

Asian Style- red bean pancake
Traditional Banana Pancake got a little twist with additional Asian flavor! Do you notice Asian, or particularly Japanese like having red beans in their meal a lot? They have red bean Mochi, the one that doramon loves to eat (lol, forgot what it's called..something yaki i believe), ice-cream..etc. So, as my mom cooked some sweetened red bean dessert (紅豆沙)last night and got a bit leftover, why don't I find a way to use it up ?:0 great! I could mix it in my pancake batter!! (I'm so proud of myself.lol xD) The pancake actually turned out amazing and I couldn't get enough ;( by the way, I perfect to eat it with honey, it seems more match with the red bean taste than using maple syrup..:x if you don't want to cook the red bean by yourself, because I would say it is quite time consuming, you may just buy the store bought one, I would say they will work just fine:D
