Asian Style- red bean pancake

Traditional Banana Pancake got a little twist with additional Asian flavor! Do you notice Asian, or particularly Japanese like having red beans in their meal a lot? They have red bean Mochi, the one that doramon loves to eat (lol, forgot what it's called..something yaki i believe), ice-cream..etc. So, as my mom cooked some sweetened red bean dessert (紅豆沙)last night and got a bit leftover, why don't I find a way to use it up ?:0 great! I could mix it in my pancake batter!! (I'm so proud of myself.lol xD) The pancake actually turned out amazing and I couldn't get enough ;( by the way, I perfect to eat it with honey, it seems more match with the red bean taste than using maple syrup..:x if you don't want to cook the red bean by yourself, because I would say it is quite time consuming, you may just buy the store bought one, I would say they will work just fine:D

Banana pancake

Recipe:
1/2cup flour
1/2tsp baking powder
1/4tsp baking soda
Pinch of salt
1/2cup milk
1tbsp flaxseed plus 2tbsp water
3/4banana, mashed
1/4banana, sliced for topping

Classic banana bread

When bananas have too much brown spots on them, what do you do? You would never eat them, instead, you would let them go even more ripe and bake a lovely classic banana bread! Am I right? Haha. Even though banana tastes good alone, you would never regret to wait for a few more days to let them ripe.
Recipe From baked illustrate
(make one 9x5inch loaf)
2cups flour
3/4cup sugar
3/4tsp baking soda
1/2tsp salt
1 1/2cup mashed banana (about 3medium bananas)
1tsp vanilla
1/3cup plain yogurt
2eggs
6tbsp butter, melted and cooled
1) preheat oven to 375F, butter and flour a loaf pan.
2) in a large bowl, mix together flour, sugar, bs and salt. In a separate bowl, whisk together remaining ingredients. Add the wet into the flour mixture, stir until just combined.
3) pour batter into prepared loaf pan, bake in preheated oven for 1hr. If the bread went too dark, reduce the temperature to 350F.

Perogies

Amazingly gooood for my first try!!!
Recipe (make 4dozen):
Dough:
4cups flour
1/4tsp salt
1egg
1cup 1%plain yogurt
1/2cup water
Filling:
Cooked potato
Butter
Cheddar cheese
1) mix together flour and salt in a large bowl, create a well in the center. Add in egg, yogurt and water. Use a wooden to stir until everything comes together.
2) Turn out onto a floured working surface, knead the dough by hand until it is smooth and does not stick to your hand.
3) Roll it out, use a cookie cutter to cut out circles. Wrap in filling and fold in half, use a fork to seal the edges.
4) cook them in a pot of boiling salt water for around 5mins.
5) serve with sauté onions and sour cream.

Gingerbread cake

Today, when I searched over the cupboard randomly, I found an opened can of molasses -.- like seriously, I am pretty sure it has been there for quite a long time, lucky that I have found it, or else its going to expire so soon. So yeah, recipes that require huge amount of molasses would be gingerbread cake, right? I guess that's all I could think of. So here you go, an incredibly easy and taste gingerbread cake..did I tell you that it is also low in fat?:0 I don't normally make gingerbread cake,usually in the Christmas, but this one is really worth eating everyday!!so moist and the flavor is just exactly right. My mom even shared it with our neighbor and got great responds.
Gingerbread cake Recipe:
1c flour
1tsp baking soda
1/4tsp cinnamon
1/4tsp ginger
1/8tsp salt
1/4cup sugar
2tbsp softened butter
1egg
1/2cup molasses
1/2cup hot water
1) mix together flour, bs, spices and salt in a bowl.
2) in a separate bowl, cream together butter and sugar, beat in egg slowly and add molasses.
3) add flour mixture and water alternately to the butter mixture.
4) bake in 350F oven for 30mins.

Flaxseed apple pancake


Flaxseed Apple Pancakes Recipe: (yield 3giant pancakes)
1/4cup ground flaxseed
1/4cup all purpose flour
3/4tsp each Bp, bs, ground cinnamon
1/2cup milk
1tbsp honey
1/2tsp vanilla
Apple slices
1) in a bowl, mix together flaxseed, flour, Bp, bs, and cinnamon.
2) add in milk, honey and vanilla, the batter should turn thick as you stir it.
3) heat a small frying pan with oil, pour in batter and arrange apple slices on it. Flip to the other side and continue to fry until two sides are golden brown.
* be ware that these pancakes get burn easily, so keep an eye on them and use low heat to fry. Flip them as soon as they are golden.

Flaxseed mug cake

When I heard of this idea, I didn't give much hope to it, caz I had a feeling that the cake would turn out to be so eggy and flaxseed-y , which is the texture I don't really like to have in my cake. But I still give the recipe a chance. I tried it out and wowla !! It is amazing:D I'm not even exaggerating, the cake as you can see from the pictures, is so light and fluffy, and the sweetener actually takes away the "healthy" taste from the cake. In addition, this cake is super healthy in which you don't even have to feel guilty about eating another one :)
Flaxseed 1min cake recipe:
1/4cup ground flaxseed
1/2tsp Bp
1/2tsp ground cinnamon
1/4tsp ground ginger(optional)
1egg
2tsp honey/maple syrup
1tsp oil
1) mix together dry ingredients in a big mug, add in egg, honey and oil. Stir well. Microwave it for 1min:) enjoy with a touch more honey if you wish.

Microwaved cake

This is no ordinary cake, because it only takes a few minutes to make. The secret is a microwave:D k, this is not a big secret actually, instead, it is quite popular among household because it cause no mess and perfect for people who cannot wait or people who have a crave for sugar all of a sudden like me! However, unlike all other microwaved cake, this one is EGGLESS!!!

Recipe: (1big mug)
3T flour
3T sugar
1.5T cocoa powder
1/8t baking soda
3T oil
3T milk
chocolate chips (optional but recommended )
1) mix together flour,sugar, cocoa and baking soda. Add in oil and milk. Mix well. Microwave it for 1:30mins :)
*beware not to overcook, or else you will get a dry and crumbly cake. Its normal that the cake looks a bit wet. If its uncooked, then microwave it for another 20sec .

Strawberry Cake Roll

How many attempts have I done so far for a perfect Swiss cake ? Im not going to count cas Who cares..?! Lol.
Recipe:
4eggs in room temp.
80g sugar
80g cake flour or all-purpose flour
20g custard powder
1/4tsp salt
50g oil or melted butter
1/2tsp vanilla

1) line a sheet of parchment paper in a 11x23"baking tray... beat together eggs and sugar on hight spoken for over 7mins, or until you reach a consistence of thick ribbon. The beaten egg-sugar mixture should be pale in color and doubled in size.
2) sift in flour, custard powder and salt. Fold it in gently until it is combined, do not mix too hard which will destroy the air bubbles and results in a dense cake.
3) add oil and vanilla, fold it in as well.
4) pour batter into the prepared baking tray . Bake in 375F oven for 15-17mins or until the top has turned golden.
